The Marchigiani Riccioli artisanal pasta made from hard wheat Columbro belongs to the family of short-cut pasta. They feature a particular cut typical of the Marchigiana tradition.
The raw materials used are highly selected: the flours come from Canadian plains, ideal for hard wheat cultivation.
The production of Marchigiani Riccioli is completely artisanal and gives the pasta a rough and porous texture, excellent for accompanying strong and hearty sauces.
Like all types of pasta produced by the Columbro pasta factory, the processing occurs through traditional methods, using bronze dies. Once shaped, the Marchigiani riccioli are dried at low temperatures of 45/60°C to keep all the flavors and aromas alive.
Come tutti i tipi di pasta prodotti dal pastificio Columbro, la lavorazione avviene attraverso procedimenti tradizionali, con l'utilizzo di trafile in bronzo. Una volta creati, i riccioli Marchigiani vengono fatti essiccare a temperature basse di 45/60°C per mantenere vivi tutti i sapori e gli aromi.

The unique shape of the curls pairs wonderfully with any type of meat sauce.
They can also be dressed with asparagus, ginger, and saffron or with a delicate fish sauce.
