Pantelleria is a magical island of volcanic land with a unique and rare internal vegetation. In addition to the famous vineyards that produce one of the world’s finest sweet dessert wines, Zibibbo, Pantelleria is renowned for its delicious Wild Capers that grow among dammusi and dry stone walls, reaching up to the Mediterranean scrub that savors the aroma of the sea.
The capers are harvested by the Cutrera family on their properties and are preserved in sea salt from Trapani, naturally, in a dark glass jar.

The Capers from Pantelleria by Frantoi Cutrera, in a jar under salt, have a high salt content. Therefore, it is advisable to rinse them briefly under fresh running water to remove excess salt. Then, if desired, they can be sautéed lightly in a pan until they become drier and crunchier.
Perfect for summer fresh salads, such as the typical Pantesca salad with datterini tomatoes, boiled potatoes, basil, sweet red onion sliced julienne, pitted green olives, and sardines.
