The Malga Ciapela aged for 2 years is a cheese made with raw mountain milk and ripened in a natural tuff cellar located at the foot of the Queen of the Dolomites, the Marmolada.
Pasta is straw-colored, soft and compact, with a regular medium-sized eye formation. The rind is regular and light yellow in color. The flavor is sweet, fragrant with a pronounced buttery note, and a slight bitter aftertaste that is very pleasant and persistent. The aroma is pronounced, fresh, with a hint of cream.
The Malga Ciapela aged for 2 years (which we present on this page in a 500g portion) is an excellent cheese for a cutting board, especially if it’s a board of mountain products. It is also great to enjoy neat at the end of a meal paired with a good intense red wine, such as a Valpolicella DOCG Amarone. It pairs very well with chestnut honey.
