A 2006 Cabernet Sauvignon is a rarity considering what is available on the market, but this is also part of the production philosophy of Gildo Gennari who, in exceptional vintages, tends to extend the aging periods of the wine in the cellar to achieve taste balances and harmonies that would otherwise be lost. Here, the aging takes place in both steel and wooden barrels. The long aging has softened the sharp edges and elevated the elegance of the product.
The characteristic of the Colli Berici is that it has a subsoil particularly rich in humidity and active minerals. A terrain called Tovo Marino that incorporates fossil sands ideal for the production of great international red wines. In this vibrant Cabernet Sauvignon, there is all the elegance and nobility of a fine grape variety and the bold simplicity and straightforwardness due to essential agronomy where even the grass is never mowed. A practice that belongs to the production philosophy of Gildo Gennari, who loves to define the vineyard as a living body that carries out all its substantial activities for the quality of the grape underground.
The Campomagro is a 15-year-old wine, and this alone should make us reflect on its ability to find an identity at the table, which will certainly not be trivial. It pairs well with long-aged hard cheeses. Excellent with 36-month Parmigiano Reggiano DOP from Solabruna. Also pairs nicely with aged Caciocavallo Podolico and long-aged Ragusano DOP. It goes very well with cured meats from wild black pigs, which are of good intensity and spicy. It also pairs very well with game dishes and particularly cooked and marinated meats.
