Gemma is the name of the pure Garganega produced by Gildo Gennari on the Berici Hills. This is already a peculiarity. It is even more so when you read the vintage in question: 2007. As we know, making sense of Gildo's vintages is not an easy task. However, it is certain that in the end, it is he who decides who deserves aging and who does not. A choice that comes from numerous factors: the ripeness of the grapes, seasonality, the integrity of the musts, and the quality of the fermentations, in addition to the aging capacity and stability of the wine. After all these evaluations, Gildo decides when to release his wine.

This Garganega is very fascinating because it includes an expressive strength of the fruit refined with sensations of dried nettle, sage, and thyme, chamomile, and magnolia flowers. Interesting for its freshness and the savory depth on the palate. An antagonistic Garganega, a bit of a rebellious spirit like Gildo. And he has tried to tame and refine it. This thanks to a perfect vintage with ripe and golden bunches brought to a slight over-ripening on the vine. Vinification in steel so as not to take anything away from what the plant has defined in the bunch. Then aging in the bottle.

Gemma is a special wine as it comes from an extended aging in the bottle and therefore possesses an aromatic olfactory profile that departs from what we normally consider for fresh wines, particularly for the Veneto Garganega.

In this case, we can match it with slightly smoked cheeses, for example, a beautiful smoked buffalo mozzarella from Campania DOP, smoked sheep ricotta, or smoked provola. In particular, this vintage Garganega is interesting to pair with cold cuts such as Parma ham DOP, San Daniele DOP, and fatty black pig salumi. First courses like Ligurian stew, Tuscan pappa al pomodoro, chickpea soup, or spelt soup. It also goes well with white meats, roasted rabbit, or grilled chicken.
