The Lentiai, like many other dairy cheeses produced in mountain huts, is the classic dairy cheese made from whole milk from high mountain pastures. After curdling and salting, it is aged on wooden boards for at least 30 days. Ours is a rare piece aged for about six months.
Lentiai is a small village located in the province of Belluno in the so-called Val Belluna. The milk coming from various small producers is fully processed by the local cooperative. In this case, we present to you a matured dairy cheese aged for no less than 6 months, which can rightly be defined as a rarity. A mountain work of art.
Cow's milk, natural rennet, sea salt
Great cheese from premium cutting boards. Excellent for grating due to its slightly spicy sensation from the long aging process. Pleasant also with classic corn polenta. Pairs well with medium-structured wines, both white and red, particularly leaning towards great Chardonnay slightly aged in barrels or Valpolicella Superiore Ripasso DOC.
