The Lentiai, like many other cheeses produced in mountain dairies, is the classic dairy cheese made from whole milk from high mountain pastures. After curdling and salting, it is aged on wooden boards for at least 30 days. Ours is a rare piece aged for about six months.
Lentiai is a small village located in the province of Belluno in the so-called Val Belluna. The milk that comes from various small producers is completely processed by the local cooperative. In this case, we present to you a cheese aged for as long as 6 months, which can rightly be called a rarity. A masterpiece of the mountains.
Cow's milk, natural rennet, sea salt
Great cheese for premium cheese boards. Excellent for grating due to its slightly spicy sensation from the long aging.
Pleasant also with the classic and traditional corn polenta.
It pairs well with moderately structured wines, both white and red, with a particular inclination towards great Chardonnay lightly aged in barrel or Valpolicella Superiore Ripasso DOC.
