Denis Secco has renovated the ancient malga Speloncia located among the peaks of Monte Grappa. Here he produces an award-winning cheese that has received multiple medals in national competitions for raw milk cheeses from high mountain pastures. This cheese has a particular feature: on one side, the numbers 3, 6, 9, 12 of the hours of a clock are impressed. In fact, ancient history teaches us that the shepherds, often unable to afford a scale, would weigh by hours.
