The Parmigiano Reggiano DOP made from only Bruna milk is a product with a high organoleptic profile, exhibiting a pleasant delicacy and floral olfactory notes. It has an intense aroma, just like its straw-yellow color. The texture is soft: just the tip of a knife is needed to cut the cheese.
It is an even more nutritious Parmigiano with a unique and characteristic flavor. The added value of Bruna comes from the significant content of fat (4%) in the milk of this breed and especially of protein (3.8%): a combination not found in any other breed in the world.
The Parmigiano Reggiano DOP made from only Bruna milk is regulated by two Consortiums and has a double protection: that of the DOP and that of the designation “made from only Bruna”. The latter is registered by a consortium that works for the promotion and implementation of activities aimed at enhancing, protecting, and disseminating typical products derived from Bruna cattle registered in the national genealogical book, conducting periodic checks on production protocols, the cows, and the organoleptic characteristics of the milk produced.

Intriguing for succulent appetizers and for appetizing starters complemented by a drop of Balsamic Vinegar Traditional from Modena or Reggio Emilia.
Ideal paired with classic method sparkling wines and with medium-bodied white wines.
Also excellent with red wines like Valpolicella DOC or with Chianti DOCG.
