This Parmigiano Reggiano DOP from Modenese White Cows is aged for at least 30 months, and it is a cheese whose paste is of light straw-yellow color, with a meticulously granular structure that easily breaks into flakes. The rind is slightly oily and of a natural straw-yellow color.
