The product is, in fact, at the limit of denaturation and carries with it unique characteristics: tasting it, one can clearly perceive a toasted aftertaste, sometimes bitter, which makes this Parmigiano Reggiano a food for refined palates and highly sought after for unusual pairings. The long aging process results in its almost total absence of lactose, making it a digestible food for those who are intolerant.
