The production of this cheese is closely linked to the Piedmontese alpine area and in particular to the margari who used the mountain pastures during the summer and then returned to the valleys or plains during the winter.
The Toma di cascina d'alpeggio (which we present here in a one-kilogram portion) is a cheese of intense yellow color, with a very pleasant smell and a strong flavor. It pairs perfectly with a soft carrot and almond cake with English cream accompanied by a full-bodied red wine, but also fortified wine.
