The Vézzena cheese has been made for centuries in the Trentino pastures of the Vézzena Plateau, using raw milk from alpine grazing, traditionally aged for a long time in caves. It is a cheese particularly sought after for its organoleptic characteristics, due to the uniqueness of the herbs in the pastures of Vézzena.

It has a thin and hard crust of a straw-yellow color tending to brown. The paste is compact and consistent, with scattered holes. With an aging of three years, it is very well suited to be grated. The flavor is full and slightly piquant, rich in the scents of herbs and flowers from the meadows.
