The Vézzena cheese has been made for centuries in the Trentino alpine pastures of the Vézzena Plateau, using raw milk from grazing cows, traditionally aged for a long time in caves. It is a cheese particularly sought after for its organoleptic characteristics, due to the uniqueness of the herbs found in the Vézzena pastures.
It features a thin, hard rind of straw yellow color tending towards brown. The paste is compact and consistent, with scattered holes. With an aging of three years, it is very suitable for grating. The flavor is full and slightly spicy, rich in aromas of herbs and wildflowers.
The Vezzena aged in a cave for 3 years (which we present here in a 200g portion) is an excellent cheese both for the table and for grating.
In addition to the classic pairing with polenta, it is also great with honey. Try it grated on minestrone soups.
As a pairing, we recommend a Vino Santo Trentino and it goes well with a Trentino DOC Lagrein or a Trentino DOC Marzemino.
