The apricots come from the fields on the clayey lands of the Mantuan countryside. Senga picks them close to ripeness to preserve their firmness and the aromas that we find very pronounced and fresh in the mustard.
Mostarda, as it is known, is a typical Mantuan recipe made with fruits and vegetables in a sugar syrup and mustard essence. Therefore, it is particularly spicy, but Senga manages to produce it very balanced and delicate. With her proprietary apricots, she creates this mostarda to pair with semi-aged goat cheeses, Asiago, Montasio, and Brie.
