A savory tribute from Corrado Benedetti to the winemaking traditions of his land: the Coppa Affinata all'Amarone della Valpolicella is the result of processing selected meats from local pigs, characterized by the perfect balance between lean and fat parts that give it its distinctive marbling. 

After the aging of over 12 months, the coppa is refined through immersion in Amarone for about twenty days, then it is extracted and dried to continue aging for another month. 
The Amarone thus imparts fragrance and softness to the coppa, which absorbs the typical scents and colors of Amarone.


Ingredients:

Pork meat, salt, dextrose, spices, flavorings, SULFITES. Antioxidants E301, E300. Preservatives E250, E252. Aged in wine: “Amarone della Valpolicella Docg”. Inedible casing.

The Deavina Coppa aged in Amarone, whole form, is a salami that enhances any appetizer and is perfect when accompanied by an intense red wine.

Wonderful on a slice of warm bread, despite the uniqueness of this salami, the ideal way to enjoy it is fresh as an appetizer, slicing it at the moment and laying the slices on a beech wood cutting board. Given its delicacy, it pairs excellently with delicate mustards made from berries or cherries.

Tasting

The unique aging process of this salami allows the meats to absorb the intense aromas of the red wine, darkening and becoming even more tender, which will release aromas and flavors for a triumph of culinary wisdom.

The slice presents a very intense ruby red color, broken by white veins typical of the coppa. 

On tasting, the presence of Amarone is evident; one can immediately perceive the slight fruity notes imparted by the wine. It is a sweet and delicate salami, with an aromatic wine scent.
