The Blu di Veja made from cow's milk aged in white wine is one of the flagship products of Corrado Benedetti's selection. A blue cheese with a compact and firm texture, made with only cow's milk produced by a small dairy farm in the Gorgonzola area.
A very tasty semi-cooked cheese made from cow's milk, blue veined and aged from 25 to 60 days and refined with a dip in white wine. At first glance, it looks like Gorgonzola, but it is not.

The Blue Veja made from cow's milk aged in white wine (which we present to you here in its whole form) is an excellent ingredient for risottos, such as that with grapes, Veja blue cheese, and hazelnuts. It is also great to enjoy at the end of a meal, served with a nice glass of dessert white wine or Recioto di Soave.
Its paste is straw-white in color, veined due to the development of molds with very pronounced green and blue streaks. Its rind is rough and pink. The flavor is spicy, savory, with an elegant sweet note given by the aging in white wine.
La sua pasta è di colore bianco paglierino, screziata per lo sviluppo di muffe con venature verdi e blu molto accentuate. La sua crosta è ruvida e rosata. Il sapore è piccante, sapido, con un elegante accento dolce donato dall'affinatura al vino bianco.
