The Blu di Veja made from cow's milk aged in white wine is one of the flagship products in the selection of Corrado Benedetti. It is a blue cheese with a compact and firm texture, crafted with only cow's milk produced by a small dairy farm in the Gorgonzola area.
A very good semi-cooked cheese made from cow's milk, blue-veined and aged between 25 and 60 days and refined with a dip in white wine. At first glance, it looks like Gorgonzola, but it is not.

The Blu di Veja made from cow's milk aged in white wine (half wheel portion) is a great ingredient for risottos, like the one with grapes, Veja blue cheese, and hazelnuts. It is also excellent to enjoy at the end of a meal, served with a nice glass of white passito or Recioto di Soave.
Its paste is straw-white in color, veined with the development of molds featuring very pronounced green and blue streaks. Its rind is rough and pink. The flavor is spicy, savory, with an elegant sweet note imparted by the aging in white wine.
