The Blu di Veja made from cow's milk aged in white wine is one of the flagship products of Corrado Benedetti. It is a blue cheese with a compact and firm texture, made exclusively from cow's milk produced by a small dairy in the Gorgonzola area.
A very tasty semi-cooked cheese made from cow's milk, blue-veined and aged from 25 to 60 days, enriched with a dip in white wine. At first glance, it looks like Gorgonzola, but it is not.

The Blu di Veja made from cow's milk aged in white wine (in a quarter of the wheel portion) is a great ingredient for risottos, like the one with grapes, Veja blue cheese, and hazelnuts. It is also excellent to enjoy at the end of a meal, served with a nice glass of passito bianco or Recioto di Soave.
Its paste is straw-white in color, marbled with the development of molds and very pronounced green and blue veins. Its rind is rough and pink. The flavor is spicy, savory, with an elegant sweet accent given by aging in white wine.
