The Redivino is undoubtedly one of the flagship cheeses from Corrado Benedetti. Rich and creamy, with an intense flavor and enveloping aroma: this quality cheese has a lot to offer, but its main feature is undoubtedly the aging in Amarone della Valpolicella DOCG.

During the grape harvest season, the cheese wheels are immersed in the must of Corvina, Rondinella, and Molinara grapes, from which Amarone is made, and then they are left to rest for a period that varies depending on the weight.

Once taken out of the tanks, they are dried and sent for long aging of six to eight months.

The aging of the grapes of this fine wine enhances the cheese by softening its flavor and accentuating its richness.

The Redivino cheese aged in Amarone della Valpolicella DOCG (which we present on this page in an eighth of a wheel) is very suitable to be tasted on its own at the end of a meal accompanied, of course, by a great Amarone DOCG. A Valpolicella DOC is also a good option. It pairs very well with chestnut honey and dandelion honey, along with passito wines and recioti from red grapes. It’s also worth trying in some risotto recipes, such as Redivino risotto with pink radicchio from Verona.
