The extra aged cheese in hay by Corrado Benedetti is a true delicacy reserved for those who love bold and engaging flavors. It is a mixed sheep cheese that after two months of aging enters a barrel wrapped in the hay from the Lessinia mountains.
It enters the barrel still fresh, but dry, and stays there for 90-100 days, under this soft warm cover, sealed and kept at controlled temperature and humidity. Once extracted, it continues to age for another 6 months before reaching the perfection of an intense and fragrant cheese with herbal notes.
