The extra aged cheese in hay by Corrado Benedetti is a true delicacy reserved for those who love strong and engaging flavors. It is a mixed sheep cheese that after two months of aging enters the barrel wrapped in the hay from the Lessinia mountains.
It enters the barrel still fresh, but dry, and stays there for 90-100 days, under this soft warm cover, sealed and kept at controlled temperature and humidity. Once extracted, it continues aging for another 6 months before reaching the perfection of an intense cheese fragrant with herbaceous notes.

It is a perfect cheese for quality platters, to be paired with noble Italian cured meats; excellent in combination with mustards, such as the delicate apple mustard.
It pairs very well with acacia honey and full-bodied, aromatic white wines like Gewurtztraminer.
