The extra aged cheese in hay by Corrado Benedetti is a true delicacy reserved for those who love strong and engaging flavors. It is a mixed sheep cheese that after two months of aging enters a barrel wrapped in the hay from the Lessinia mountains.
It enters the barrel still fresh, but dry, and remains there for 90-100 days, under this soft warm blanket, sealed and kept at controlled temperature and humidity. Once extracted, it continues to age for another 6 months before achieving the perfection of an intense and fragrant cheese with herbal notes.

The extra-aged cheese in hay by Corrado Benedetti (which we present here in a quarter wheel) has an engaging flavor, with hints of fresh hay and great aromaticity.
It is a perfect cheese for quality boards, to be paired with noble Italian cured meats; excellent alongside mustards, like the very delicate apple mustard.
It pairs very well with acacia honey and full-bodied, aromatic white wines like Gewurtztraminer.
