I Semolina and spelt shavings from Poderi di Pietramogolana are made with 50% spelt and 50% wheat, both grown on the lands of the Berceto farm, in the Parma Apennines.
This is a special pasta in an innovative shape suitable for both soups and sauces. The pasta is bronze drawn and slowly dried, resulting in a flavorful artisanal pasta ideal for eating every day with any type of sauce, which, thanks to its roughness, blends perfectly.
The choice to create a pasta with half spelt and half durum wheat comes from the idea of producing a more digestible pasta with a lower glycemic index due to the presence of spelt and, at the same time, thanks to the durum wheat, giving a more balanced flavor that can be enjoyable to eat every day.
