The Pennoni Rigati di Gragnano are a typical pasta shape, reintroduced by the Mulino di Gragnano in the classic version of durum wheat semolina. The pennoni are simply the larger version of classic penne rigate. The pennoni resemble the shape of fountain pens, which is where the name comes from. 

This is a cylindrical pasta shape cut diagonally at the ends. It is one of the most appreciated and widespread shapes, both in Italy and abroad.


Pennoni Rigati di Gragnano, the history

The story of the pennoni is well-known: they were born in Liguria, specifically in San Martino d'Albano, on March 11, 1865, the date when the machine for cutting pasta diagonally was patented.

It was a true revolution for the pasta makers of the time because, unlike the classic scissors, the only known way of cutting pasta until then, this new machine allowed for a regular and clean pasta cut, speeding up the processes.
