The Pecorino di Pienza Rosso is a typical cheese from Tuscany made from pasteurized sheep's milk sourced from flocks in the Val d'Orcia. It takes its name from the ancient Renaissance town of Pienza, in the province of Siena, created by Pope Pius II.

Around the Senese clays, the pastures are poor but ideal for sheep. The red version is special because it has a longer aging, about 2 months, but especially because it is colored with tomato juice, which adds a lot of flavor with a nice sweet and slightly spicy component.

The rind, thin but quite consistent, appears reddish due to the typical treatment with tomato sauce according to local tradition. The paste is ivory white or pale straw-colored, with small and sparse holes. Sweet and delicate, with notes of butter and pleasant hints of tomato in the crust.
