Pecorino Re Nero 500g

The Pecorino Re Nero from Il Forteto is a cheese made from pure sheep's milk aged for at least 3 months. The black rind recalls the peasant practice of protecting the cheese by rubbing it with a mixture of olive oil and ash to prolong its preservation.

The paste is white, crumbly, and slightly rough, while the rind, which is not edible, is covered by a characteristic protective film of black color, a feature that gives this cheese its name.

This cheese is truly tasty, complete in both aroma and flavor; the predominant note is definitely the strong one typical of pecorinos.
