The Pecorino di Pienza Rosso is a typical cheese from Tuscany made from pasteurized sheep's milk from flocks in the Val d'Orcia. It takes its name from the ancient Renaissance town of Pienza, in the province of Siena, created by Pope Pius II.
Surrounding the Sienese clays, the pastures are poor but ideal for sheep. The red version is special because of its longer aging, about 2 months, but especially because it is colored with tomato juice, which enhances the flavor significantly with a nice sweet and slightly spicy component.
The Pecorino di Pienza Rosso (which we present to you on this page in its whole form) is a table cheese that is highly sought after, to be paired with mustard and honeydew honey. The pairing is with full-bodied red wines from the Tuscan tradition such as Chianti Riserva.
The rind, thin yet sufficiently firm, presents a reddish color due to the typical treatment with tomato sauce according to local tradition. The paste is ivory white or pale straw colored, with small and sparse holes. Sweet and delicate, with buttery notes and pleasant hints of tomato in the undercrust.
