The Pecorino Re Nero from Il Forteto is a cheese made from pure sheep’s milk aged for at least 3 months. The black rind recalls the peasant tradition of protecting the cheese by rubbing it with a mixture of olive oil and ash to prolong its shelf life.

The paste is white, crumbly, and slightly rough, while the rind, which is inedible, is covered by a characteristic protective black film, a feature that gives this cheese its name.

This cheese is truly delicious, complete in both aroma and flavor; the prevailing note is definitely the strong typical flavor of pecorinos.
