The Kinara is a truly special cheese: it is the first hard grating cheese, aged for a long time, made with vegetable rennet. An absolute novelty! For its creation, Piedmontese milk and Cynara Cardunculus flowers, a wild thistle that grows spontaneously throughout the Mediterranean basin, are used.
The long aging, over 12 months, has made the product lactose-free, so much so that it has obtained Halal certification, essential for the Muslim world and export to Arab and Asian markets. It is characterized by delicate and never intrusive aromas with a granular paste of excellent consistency. It releases fresh and floral fragrances, reminding the palate of milk and cream, finishing with an herbal note that leaves sensations of freshness and excellent pleasantness.

The Kinara vegetable rennet cheese lactose-free (which we present on this page in a 1kg portion) is a perfect grating cheese for first courses.
It is also excellent on salted meat or to be enjoyed on its own with a Cremonese mustard.
It pairs wonderfully with a good sparkling wine, a well-structured red, and with craft red or dark beers.
Is it Kinara or Gran Kinara? The current Kinara is the old Gran Kinara, the name was simply changed by the producer because it was considered too similar to another famous cheese.
