The luganega is a product made from pure pork that is minced and flavored, stuffed in a natural casing.
Let its soft texture melt in your mouth and let its aroma of spiced meat envelop your dishes, making them even more delicious and special.
Its firm and grainy texture, combined with its strong and intense flavor, turns out to be a pleasant discovery even for the most refined palates.
Its origin dates back to the historical region of Lucania during the Roman era. As evidence of its Lucanian origin, the historian Marco Terenzio Varrone wrote in De lingua latina: “They call lucanica a minced meat stuffed in a casing, because our soldiers learned how to prepare it from the Lucanians.” This dish has therefore ancient origins and was particularly appreciated, not only for its flavor but also for its ease of transport and preservation with salt. The term sausage indeed means “salted meat”; in the absence of refrigerators or preservatives, salt and slow aging were used, and it is still made today according to tradition.
Maintaining the peasant tradition, the preparation of luganega still follows the ancient recipe of Apicius, found in De Re Coquinaria from the 1st century AD: “To make lucaniche: one grinds pepper, cumin, pepper-cress, rue, parsley, sweet spices, laurel berries, Apicius sauce; and mixes everything with minced meat, then pestles the mixture again together with sauce, whole pepper, plenty of fat, and fennel. Then stuff it all into a casing, extending it as much as possible. And thus, it is suspended to smoke.
The luganega, here offered in 5 pieces weighing a total of 500g, is consumed cooked and can be used for numerous recipes: you can simply cook it on the grill or in a pan, to be served with tasty potatoes, baked vegetables, or other types of side dishes. The luganega is also suitable as a seasoning for pasta and risottos, but also in an omelet or as a filling for savory pastries.
A traditional, simple, and refined recipe we want to recommend is the luganega cooked with onion and white wine.
Remember that the luganega is a symbol of multiculturalism of our peninsula, a piece of our millennia-old rural civilization, and has helped us emerge as a country exporting good cuisine all over the world.
