This smoked cow's ricotta is a tasty dairy product that belongs to the tradition of the dairies scattered along the slopes of the Lessini mountains. It is obtained from the whey that comes from the processing of raw milk Monte Veronese cheese, to which non-skimmed milk has been added. This is the delicious spicy version, achieved by adding pieces of chili on the surface.
The fresh ricotta is salted on the surface and placed in a special chimney where it undergoes smoking for two days with oak and beech wood from Lessinia. The result is a cheese that appears deep hazelnut in color on the outside, while the inside has a white and pure paste. The aroma is of toasted wood, and the taste is delicate, also with notes of roasting.
