These baby yellow potatoes come from organic farms in the province of Ragusa, Sicily: a land rich in maritime minerals brought by the winds of the Mediterranean Sea, which give this tuber unique aromas and excellent firmness.
The baby potato from Ragusa is elongated oval in shape, with medium-large dimensions, smooth and thin yellow skin, and soft, firm flesh. It is an excellent source of selenium, an important trace element with antioxidant properties that contributes to the proper functioning of our immune system.
The BIO yellow-fleshed new potatoes from Ragusa (which we present on this page in quantities of 5kg) are extremely versatile in the kitchen. Thanks to their compactness, even during cooking, they are suitable for making gnocchi or delicious purées. Perfect for soufflés and great to roast with chicken. Superb in foil and grilled or in ashes wrapped in aluminum foil. They are often used as a side for octopus salad or in ghiotta di piscistoccu, a dish made with chunks of stockfish. An excellent ingredient for preparing stuffed focaccias, also with sausage, spinach, tuma, and cured meats, or for making bread with durum wheat flour.
