The Pecorino di Fossa from Gastronomia Beltrami is a cheese made from thermized sheep's milk and aged for at least 5 months in a pit in the snow of the Palazzo Rusticucci in Cartoceto, in the Marche region. It is made from the milk of Sarda and Sopravissana breed sheep, raised in high pasture above 500 meters altitude.
The aging of the pecorino cheeses refined by Gastronomia Beltrami takes place in two caves dug into tuff and clay, which were historically filled with snow to cool the above storage. The pits are usually prepared in August, when a bed is set up where the wheels of pecorino cheese, along with various aromatic herbs, are subsequently arranged. Once the hatch is closed, fermentation begins, creating the yeasts and molds that characterize the aging flavors of this extraordinary type of cheese. After 100 days, the pits are reopened, and aging continues on wooden planks.
The pecorini di fossa from Gastronomia Beltrami are the result of a great passion cultivated over time. The great strength of the Beltrami family is the control of the entire supply chain, transforming exclusively the milk from sheep raised on their farm, with particular attention to their health.

Great to pair with structured white wines or sweet wines, or with full-bodied red wines.
With a sweet flavor and notes of ripe fruit and cellar. It is never aggressive or overwhelming, despite having a remarkable flavor persistence.
The rind is dark, with shades from pink to orange. The paste is yellow with possibly darker spots. The shape is irregular because it is deformed during the aging process in the pit.
