Precisely those of hay in that cart pulled by a bubbling tractor that slowed down Antonio Carpenedo as he drove up a mountain road on a hot summer day.
The aroma of freshly cut hay, soft summer breeze: this is truly his beloved Vento d'Estate, a cheese capable of providing a warm experience.
This incredible sheep's cheese offers flavors that are appreciated and satisfy even the most demanding palates.
The fermentation in barrel with hay for over two months gives a grassy color to the rind, uneven and natural.
Made with pasteurized sheep's milk and aged for at least 5 months.
The cheese Vento d'Estate sheep cheese with mountain hay from La Casearia Carpenedo (which we present to you on this page in a half wheel of 750 grams) is a true experience. Contemplating while chewing what was once a cheese and is now a journey through green pastures, with eyes closed, is magic. Intense, harmonious, with floral notes and a hint of mint. Best paired with a fresh aromatic wine. Excellent sliced over meat, or simply with a piece of bread, without boundaries.
Slightly open-textured paste, cream-colored with a greenish hint. To the touch, it reconnects you with nature and the pleasant sensation of mountain grass blends with fermented residues. Semi-hard in texture. Often lacking genuine fragrances, the sense of smell awakens under the herbaceous charge of the hay rind with notes of mint, chamomile, mountain hay, and even more in the paste, pleasantly balsamic to be experienced with eyes closed.
