The cheese Vento d'Estate sheep cheese with mountain hay from La Casearia Carpenedo carries the scents and aromas of summer.
It was exactly those of the hay in that cart pulled by a rumbling tractor that slowed Antonio Carpenedo down while he was getting into his car on a mountain road during a warm summer day.
The smell of freshly cut hay, soft summer breeze: this is truly his beloved Vento d'Estate, a cheese capable of providing a warm experience.
This incredible sheep cheese offers flavors that are appreciated and satisfy even the most demanding palates. The fermentation in a barrel with hay for over two months gives it a herbaceous color on the crust, uneven and natural. Made with pasteurized sheep milk and aged for at least 5 months.
The cheese Vento d'Estate sheep cheese with mountain hay by La Casearia Carpenedo (which we present here in a 375-gram portion) is a true experience. Meditating while chewing what was once cheese and is now a journey through green pastures, with eyes closed, is magic. Intense, harmonious, with floral hints and a touch of mint. To be paired with a fresh aromatic wine. Excellent shaved over meat, with a simple piece of bread, simply without borders.
With a slightly open texture, cream-colored and a hint of green. The tactile sensation reconnects with nature, and the pleasant feel of mountain grass blends with fermented residues. Semi-hard in consistency. Often devoid of genuine aromas, the sense of smell awakens under the herbal charge of the hay rind with hints of mint, chamomile, mountain hay, and even more in the paste, pleasantly balsamic to be experienced with eyes closed.
