The cheese Briscola from La Casearia Carpenedo evokes the traditional card game popular in old taverns that are now fading away.

Antonio Carpenedo wanted to dedicate this cheese to that past world that fades like an old photograph, but it is right to keep the memory alive because it is part of the culture of all of Italy.

The Ubriaco method of Antonio Carpenedo is undoubtedly a way to preserve traditions, honoring cheesemaking tradition with wine, often sipped between one card game and another.

The cheese Briscola is nothing but a toma made from pasteurized cow's milk soaked in fruity red Cabernet wine. Afterwards, the cheese is left to age for at least 4 months.

The cheese Briscola from La Casearia Carpenedo (which we present here in its whole form) has a semi-hard texture that tends to crumble, making it excellent for being served on a beautiful cheese board. Very flavorful, the Briscola cheese is true, sincere, and for this reason, it is perfect to be consumed in good company with a glass of structured red wine, perhaps during a game of briscola.


Tasting

The wine-colored crust, covered with the pomace used for the drunkenness, is striking. The wine notes stand out right away, enhanced by the presence of the pomace. In perfect balance with the spicy part, which surprises with a hint of pepper. Fruity notes emerge, highlighting the cherry. The Briscola is flavorful, slightly spicy, with notes of buttermilk and forage. We find the delicacy of the fruity and spicy wine notes.
