Denis Secco has restructured the ancient Speloncia hut located among the peaks of Monte Grappa. Here he produces a cheese that has won multiple medals in national competitions for raw milk cheeses from high mountain pastures. This cheese has a peculiarity: on one side, it has the numbers 3, 6, 9, 12 printed like the hours on a clock. Indeed, ancient history teaches us that shepherds, often not affording a scale, weighed by hours.

It has a strong flavor of melted butter and on the palate it is decidedly milky and pleasantly creamy with a spicy sensation.
Great for seasoning coarse corn polenta like Maranello; for upscale appetizers and tasty boards.
It pairs well with red wines that are a bit soft, such as some Merlot Veneto.
