This is a type of raw cow's milk cheese from the Brun Alpine breed that is aged for at least 60 days in the mountain dairy. Subsequent aging of 6/8 months.
Denis Secco has renovated the ancient malga Speloncia located among the peaks of Monte Grappa. Here he produces an award-winning cheese that has received multiple medals in national competitions for raw milk cheeses from high mountain pastures. This cheese has a peculiarity: on one side, it features the numbers 3, 6, 9, 12 of a clock face. In fact, ancient history teaches us that shepherds, often unable to afford a scale, weighed by the hour.

It has a pronounced flavor of melted butter and on the palate, it is decidedly milky and pleasantly creamy with a spicy sensation.
Excellent for dressing coarse corn polenta like Maranello; for gourmet appetizers and tasty platters.
It pairs well with slightly soft red wines such as some Merlot Veneto.
