Denis Secco has renovated the ancient malga Speloncia located among the peaks of Monte Grappa. Here, he produces a cheese that has won numerous medals in national competitions for raw milk cheese from high mountain pastures. This cheese has a peculiar feature: on one side, it has the numbers 3, 6, 9, 12 of a clock face. In fact, ancient history teaches that shepherds, often not having the luxury of a scale, weighed by hours.
Raw cow's milk, natural kid rennet, sea salt
It has a strong flavor of melted butter and on the palate, it is decidedly milky and pleasantly creamy with a spicy sensation.
Excellent for seasoning coarse corn polenta like Maranello; for gourmet appetizers and tasty boards.
It pairs well with soft red wines such as some Veneto Merlot.
