The Sbrisolona is a typical dessert from the Mantuan tradition, with a recipe dating back several centuries. This cake is produced by the bakery Dolci Sereni in Mantova, where tradition is a true company philosophy. In addition to the classic Sbrisolona with almonds, it is also widely consumed with hazelnuts, which we present here in a dairy-free and palm oil-free version.
This dessert owes its name to its crumbly texture, with large and small crumbs that form when it is broken to be eaten, as Sbrisolona should not be cut but broken by hand.
The Sbrisolona seems to have originated before the 1600s as a poor dessert of peasant origin prepared for special occasions such as the birth of a child or the promise of a marriage, and it was then stored for a long time. The Sbrisolona was elevated with the arrival at the court of the Gonzagas, who enriched it by introducing more noble ingredients.
The Sbrisolona with Hazelnuts (dairy-free and palm oil-free) from the bakery Dolci Sereni is great to enjoy accompanied by a sweet and fortified wine, such as Malvasia, Passito di Pantelleria, or Vin Santo.
The pairing with grappa is a must, with which the cake is often soaked.
