It is a hard cheese made from pasteurized sheep's milk. It takes its name from the ancient Renaissance town of Pienza in the province of Siena created by Pope Pius II. Here, around the Senese clay hills, the pastures are poor but ideal for sheep. This black version is aged for 70-100 days and its flavor is very intense and the paste is particularly crumbly.
This cheese has been selected by Giovanni Roncolato from the prestigious Caseificio La Casara. The company has won multiple awards in international competitions and offers a wide range of its own production cheeses, including cow, goat, and sheep milk cheeses. Over time, Giovanni, the leader of the company, has become a refined cheese selector from all over the world, including this pecorino. Authentic flavors, characteristics, and genuineness are the fundamental traits of this beautiful Italian reality.
This delicious grated cheese is also perfect for fava bean soups or typical Tuscan legumes such as chickpeas, cicerchie, etc.
It pairs excellently with pear mostarda or Mantuan mustard and is complemented by sweet white wine pairings.
