The Pecorino Re Nero from Il Forteto is a cheese made from pure sheep's milk aged for at least 3 months. The black rind recalls the old farming practice of protecting the cheese by rubbing it with a mixture of olive oil and ash to prolong its shelf life.
The paste is white, crumbly, and slightly rough while the rind, which is not edible, is covered by a characteristic protective black film, a feature that gives its name to this cheese.
