It is a typical cheese from Tuscany, with a hard texture and made from pasteurized sheep's milk. It takes its name from the ancient Renaissance town of Pienza in the province of Siena, created by Pope Pius II. Here, around the Sienese clay hills, the pastures are poor but ideal for sheep. This version is red because it is colored with tomato juice. Its aging is 30 days. The cheese is enriched with a nice sweet and slightly spicy component.
