Safranum saffron is harvested and sorted with a double control pass to carefully select both the stigmas and the flowers; this is done to satisfy even the most demanding chefs during processing.
Dried for a long time and at low temperatures to avoid thermal shock, it thus reaches a shelf life of up to 3 years thanks to its extremely low residual humidity.
The name saffron comes from the Latin safranum, which in turn comes from the Arabic za’faran, meaning golden yellow, light, revealed wisdom.
