The cannellini beans from the Azienda Agricola Cleopatra are dried legumes grown naturally, without the use of chemicals, fully hand-processed, and respecting the rhythms of the seasons.
The cannellini beans are white-pink legumes with an elongated shape; once cooked, they become very soft and easy to work with. These beans are practically free of fats and cholesterol and are naturally rich in plant proteins, carbohydrates, fiber, glucodrine (a substance that can reduce blood sugar), lecithin (which contributes to the rapid emulsification of fats), minerals (especially calcium, phosphorus, and zinc), and vitamins (especially from the B group).
The dried cannellini beans from Sardinia of the Azienda Agricola Cleopatra once cooked, become very soft and easy to work with: they are excellent for the preparation of appetizers, minestrones and soups, side dishes, purees, salads, and main courses.
Before cooking, it is advisable to subject them to rehydration, leaving them to soak in warm water for about 6 hours.
They should be stored in well-closed containers in a dark, cool, and dry place, away from heat sources.
