The Piave DOP Fresco is the most famous of the typical cheeses from Belluno. Born from the experience of local master cheesemakers, it is still produced today in accordance with traditional methods.
Thanks to the processing and the quality of the raw materials used, since May 2010, Piave cheese has obtained the Protected Designation of Origin (DOP).
It has a sweet and intense flavor that becomes more pronounced as it ages. In this aging, which lasts from 20 to 60 days, the rind is soft and light while the paste is white.
Piave DOP cheese is produced exclusively in the province of Belluno, located in the northernmost part of Veneto and nestled between Trentino Alto Adige and Friuli.
Piave DOP is made with whole pasteurized cow's milk collected exclusively in the Belluno valleys from typical local breeds, including the Italian Brown, fed with local forage rich in flowers that give the milk distinctive organoleptic characteristics.
Ingredients: Cow's milk, salt, rennet.
Preservative: lysozyme (egg protein).
Inedible rind.

The Piave DOP Fresco is the ideal ingredient for all the classic recipes of the Belluno culinary tradition, but it is also suitable for creating many refined dishes of Italian cuisine.
In fact, when fresh, Piave DOP is truly excellent as a table cheese, battered, or melted to deliciously enhance vegetables or polenta. Finally, it is recommended to pair it with young and light white wines.
