The Caciotta Fresca della Lessinia by Corrado Benedetti is a product made with top-quality ingredients: the best mountain milk is skillfully processed with high-quality standards. The result is a fresh cheese, easy-going, that simply expresses all the goodness of the pastures it comes from.
The name caciotta comes from the Latin "cacio", which was historically used until the 19th century to indicate cheeses from the peninsula.
Once opened, the Caciotta fresca can be preserved by wrapping it in a damp linen cloth, ensuring that the slice doesn’t dry out and oxidize when in contact with air, but remains soft like when it was freshly cut.
Caciotta is a cheese similar to pecorino, of recent invention; it arises from the need to produce cheese in a short time, without paying too much attention to aging.

Sold whole at 600 grams, it is excellent to use fresh as an appetizer, without the addition of anything else, but it also pairs well with honey, seeds, citrus jams, or compotes.
Sliced, it can be grilled on a plate or it can be melted on bruschetta, on polenta after being grated or cut into large pieces, or simply sliced to dress salads.
