The name caciotta derives from the Latin "cacio", which was used in ancient times, until the 1800s, to refer to cheeses from the peninsula.
The smoked caciotta, once opened, can be preserved by wrapping it in a damp linen cloth, ensuring that the slice does not dry out and oxidize upon contact with air, but remains as fresh as when it was cut.
