Full-form Extra Refined Cherry Hide

The Nascondino Extra Affinato in Ciliegie (presented on this page in the whole form of 2Kg) by Corrado Benedetti is a cheese with a white or pale yellow color with reddish infiltration in the crust. Its aroma reminds of fruity notes of ripe marasca cherries.

This particular aging process follows a method very similar to its larger version, but the result is completely different. This is due to the starting cheese, which in the extra version is of reduced size. The selected caciotte are aged in Corrado Benedetti's premises in Croce dello Schioppo to develop their flavor profile. The aging process involves prolonged contact of the cheese with a puree obtained from the maceration of cherries. The practice of hiding cheese under fruit has ancient origins and is the source of this product's name. In this version, the Nascondino develops fresh and delicate flavors, in addition to its characteristic reddish coloration.
